Trinity Campanelle Pasta
Foggy Mountain Pasta makes an incredible local product: small-batch pastas, made slowly and with lots of care, using distinct flours and offering unique shapes. You can tell the difference right away when you taste it. The trinity is a blend of Wren's Abruzzi rye and two winter wheats, making it earthy and a little sweet. The campanelle is a beautiful floral shape. Like any of Gabriel's pastas, if you just use butter or olive oil and parmesan, you'll be set, but this also stands up well to a pesto or cream sauce.
