When cucumbers aren't as readily available during the colder winter months, we source daikon radishes that can grow locally in the cold from Virginia, Maryland and Pennsylvania farms. Our winter 2019/2020 daikon radishes were grown by ecoganic Earth Spring Farm. We love Framer Mike + met him at the Mount Pleasant Farmers Market! He has worked tirelessly to figure out the best growing methods to grow our daikon radishes :)
Daikon is a radish commonly used in Japanese cooking that grows throughout the winter. And, it remains amazingly crunchy even after being pickled! Our Honey Habanero Daikons are sour, spicy and sweet. They are the winter version of our most popular sweet cucumber pickle. Try slicing these up in Vietnamese style lettuce wraps.
Ingredients: Cucumbers, water, apple cider vinegar, white vinegar, salt, spices, honey, calcium salt
