Butternut squash is sweet and satiating, especially roasted. Carefully cut into half lengthwise, scoop out the seeds, and peel. For an indulgently creamy, dairy-free pasta sauce, simply cut into two-inch chunks, coat with olive oil and salt and pepper, and roast — along with some cloves of garlic — until super tender. Blend the squash and garlic with chicken or vegetable stock. Season with salt to taste plus a little nutmeg. Thin with pasta water and toss with warm pasta.
