Always willing to extol the virtues of bitter greens, Farmer Casey is the biggest fan of these complex greens. Coming in colors ranging from light green to deep burgundy, bitter greens are a great way to add a new flavor to your meals.
This pack will contain 4 heads of bitter greens (with at least two different types of greens). The combination will include 4 of the following:
Endive (frisee or escarole)- Saute this green with onions and garlic for a quick side dish or add to a soup with potatoes and lots of herbs.
Treviso, Chioggia, Castelfranco or Bel Fiore radicchio- Radicchio makes excellent, colorful salads. Toss in your salad dressing a bit ahead of time to soften the greens. Top with roasted squash, pickled beets, hard-boiled eggs, pumpkin seeds, and cheese. Either a soft variety like goat cheese or a hard type like parmesan will be delicious.
The Farm at Sunnysideis managed by Stacey and Casey. We first met them at the Arlington Farmers Market in 2013 when starting Number 1 Sons. Stacey and Casey are phenomenal farmers and managers tending to the health of their land, soil, staff and our community with their nutritious + delicious vegetables. You may have eaten their vegetables at the Dupont Circle Farmers Market, Falls Church Farmers Market, The Dabney or A Rake's Progress :)
The farm borders the Shenandoah National Park - read more about their conservation efforts on theirwebsite. We love visiting Sunnyside and learning about cover crops, compost, field rotation, food safety processes, and working with a seasonal farm staff - Stacey and Casey excel at all these things!
