Aged Raw Milk Cheddar

Spring Gap Mountain Creamery makes raw milk cheese from pasture-raised Jersey cows. All the milk comes from a single farm in West Virginia.
Sophie's Select is a medium sharp cheddar made in the traditional English style, with each wheel dipped in hot water and wrapped in butter-soaked cheesecloth before aging for four to six months. Penny from Spring Gap Mountain Creamery told us that this cheese has been aging all winter - six months - and is extra amazing! Just the right amount of funk :)
Spring Gap Mountain Creamery is cutting us 6 ounce pieces of their aged raw milk cheddar named after their beloved dog Sophie. Your piece of hand-wrapped cheese may be just over or under 6 ounce. We're working to get this as consistent as possible! Who's measuring when you're eating it in one sitting, anyway?!
We met Penny and Jurgen of Spring Gap Mountain Creamery at farmers markets right when we started our business. They had moved to Paw Paw, WV in 2010 for a change of pace (transitioning from DC office jobs to making delicious raw cow's milk cheese!). When we've put in a long day at markets, there's no one who makes us laugh more than Penny and Jurgen. Doesn't hurt that their cheese is simply really good :)
