Aged Raw Milk Tomme
Spring Gap Mountain Creamery makes raw milk cheese from pasture-raised Jersey cows. All the milk comes from a single farm in West Virginia.
Shenandoah Sunrise is Spring Gap Mountain Creamery's take on a southern French farmstead tomme. With a savory start and a tangy finish, it is delicious paired with fresh fruit but is also suitable for grating over salad, pasta or vegetables. A bit saltier than their cheddar. All of their cheese have just the right amount of intriguing funk.
Spring Gap Mountain Creamery is hand cutting us a wedge of their raw milk tomme. Your piece of hand-wrapped cheese may be just over or under 7 oz. Which is the perfect size for a week's worth of cheese snacks.
We met Penny and Jurgen of Spring Gap Mountain Creamery at farmers markets right when we started our business. They had moved to Paw Paw, WV in 2010 for a change of pace (transitioning from DC office jobs to making delicious raw cow's milk cheese!). When we've put in a long day at markets, there's no one who makes us laugh more than Penny and Jurgen. Doesn't hurt that their cheese is simply really good :)
