As peppers turn from green to red, they become fruitier, with a bright, sweet heat. Mike says to make homemade sriracha-style sauce with these. You could also char them, cover in a bowl to let steam, and peel them. Chop and layer with slices of garlic, drizzle with olive oil and salt. Or try a fun, red jalapeño popper by stuffing with cream cheese, wrapping with bacon and baking until crispy.
