**Path Valley sends contents of upcoming week of veggie boxes Tuesdays after noon. Therefore, the veggies listed may be different than what was ordered! This ensures the best produce is picked for your culinary creations!**

The Happy Family Veggie Box is delightful for a larger family, or four voracious vegetable-centric eaters.  Your box is harvested to order, changes weekly, and is chosen to express the best of what is seasonal and delicious, guided by nature and the farmers of Path Valley Farms. Eat all these veggies within a week or so, and go for the delicate greens first. 

There are new baby carrots peeping up in the greenhouse, but this week you’ll get a batch of big carrots: slice them into rounds and sear in a skillet, then finish with a little maple syrup and sambal for a sweet-funky-spicy glaze. You could also make a carrot pickle, flavored with hot and spicy oregano, to go on sweet potato tacos; add thinly sliced raw beets to the mix to make it extra colorful. Thinly slice kale and massage with a little salt and oil, then add it to a slaw with julienned radishes and apples; top it with chives or dill, and a handful of pea shoots. Do you make focaccia? Top it with caramelized onions and thinly sliced potatoes, then serve with a big salad of mixed greens or arugula. 

Contents for March 9th-12th:

  • 1 pound watermelon or triple Chinese radishes
  • 2 sweet potatoes
  • 2 onions
  • 3 apples
  • ¾ to 1 pound kale
  • Handful of chives, dill, or hot and spicy oregano
  • 2 ounces micro pea shoots
  • 2 pounds Eva or Russet potatoes
  • 2 pounds big carrots
  • 2 pounds baby beets
  • 1 pound mixed greens or arugula

Note that though it’s rare, occasionally the farm will make substitutions when they run out of certain vegetables.

The collective is owned by the growers and operates with the intention of keeping families working together. Their goal is to grow tasty food on healthy land that will be sustained through generations.
