Baby ginger is a treat, only harvested once per year. It has a delicate flavor and it's tender and juicy — less intense and less fibrous than mature ginger. It doesn't even need to be peeled. It can be eaten raw, so try grating it into a soup or blending it into a dressing or adding to a smoothie.
