Medium Veggie Box
The medium veggie box is for two-to-three veggie lovers who enjoy having vegetables throughout the week. Your box is harvested to order, changes weekly, and is chosen to express the best of what is seasonal and delicious, guided by nature and the farmers of Path Valley Farms. Eat all these veggies within a week or so, and go for the delicate greens first.
It snowed and there was frost up at the Path Valley farms, which impacted those spring goodies like asparagus and rhubarb. But you’ll still get 3/4 pound of asparagus in this box, with the promise of more spring delights to come. (PSA: you can order rhubarb separately.) You could make a fun dip (yogurt-based, perhaps) with spring garlic, scallions, and herbs, then eat with a platter of vegetables. Char the asparagus on a skillet, boil the potatoes in salted water, slice the radishes and Hakurei turnips to eat raw. Scatter the small tomatoes all about. For the hearty greens, chop and stir-fry, then hit them with a punchy combo of fish sauce and oyster sauce. Top with scallions and pea shoots. Pair with rice and an egg, if you’d like.
- 1 bunch of red or white spring onions/scallions
- 2 bunches of hearty greens like dandelion, kale or chard
- 3 pounds gold potatoes
- 1 bunch of sweet Hakurei turnips
- ¾ pound asparagus
- 1 pint of small mix tomatoes
- 2 cucumbers
- 1 bunch of radishes (French breakfast or gourmet mix)
- 2 ounces pea shoots
- 1 bunch of spring garlic
- Handful of herbs
