Path Valley Farms - Week of 3/2 Line Up

The line up for week of March 2 - March 5 :

This Medium Veggie Box is delightful for 2-3 people, especially the duo who likes to eat lots of vegetables throughout the week. 

MEDIUM VEGGIE BOX (Tuesday, Wednesday, Thursday, Friday)

You’ll get shell beans this week, which were ripe in August, then picked once they dried out, and pulled from their shells and sorted during the long winter evenings. When preparing such fresh dried beans, you don’t even need to soak them. Simply cover with a few inches of water, add a glug of oil and whatever seasonings you’d like (a sprig of rosemary, perhaps), then simmer partially covered for one to two hours, until soft. Add salt and let the beans cool in the pot, then serve with more minced fresh sage or parsley, olive or sunflower oil, and some of the bean broth. (Hot bean broth fortified with miso and vinegar makes for nice sipping on chilly mornings.) You could also puree cooked beans and make a dip for crunchy fresh carrots or slices of black Spanish radish. Finely chop rosemary, sage, or parsley, mix with garlic and oil, and drizzle over freshly boiled potatoes. Roasted beets are good; roasted beets on a bed of hummus with chopped hot hearts, all scooped up with pita, are great. 

  • 1lb shell beans
  • 2lb lg orange carrots (maybe some mix color)
  • 2lb mix color fingerling sweet potatoes
  • rosemary or sage or parsley
  • 1/2lb custom mix greens
  • 1lb black spanish radish
  • 2lb baby mix color beets
  • 2lb potatoes

The Happy Family Veggie Box is delightful for a larger family or we estimate 4 voracious vegetarian eatersEat all these veggies within a week or so, eat the fresh greens first!

HAPPY FAMILY VEGGIE BOX (Tuesday, Wednesday, Thursday, Friday) 

This week’s box includes an extra boost of green, with mixed greens, curly kale, and tiny fennel bulbs. Thinly slice the fennel (roast it if you’d like to mellow the anise notes) and pair with roasted beets to go over mixed greens. (Bump up the wintry salad vibe with orange segments or thinly sliced and roasted meyer lemon slices.)

  • 2lb lg rainbow carrots
  • 2lb mix color fingerling sweet potatoes
  • rosemary or sage or parsley
  • 1lb custom mix greens
  • 1lb black Spanish radish
  • 3lb lg mix rainbow beets
  • 2lb potatoes
  • 2 pieces tiny fennel
  • 3/4-1lb curly kale
